Island Roots
My name is Minty and welcome to Under de Mango Tree! Like any good Trini, I love food. I am a bona fide TrinAmerican (Trinidadian born in America ;)). Daddy is a Moruga boy (“deep Sout”) and Mom is from Santa Cruz (“up dey by Maracas”). So of course I grew up eating macaroni pie, stew chicken, pelau, and “doh forget de pepper sauce!” ;)
Thanks to my mom I started cooking at a young age. She encouraged my desire to try things on my own, and taught me the basics of seasoning meat (“make sure an use plenty lime, eh!”), making a roux, how to make dumplings, and more.
Food + Nutrition = LOVE!
My love for food met my love for nutrition when I took a vegetarian cuisine class in college. Mrs. Donna Green-Goodman told her story of cancer recovery through lifestyle changes, and taught us how many diseases can be reversed or improved through something so simple–nutrition! It was love at first bite. This fall I will be starting my Master of Public Health Nutrition/Dietetic Internship Program. I’m so excited!
My personal philosophy on eating is to “eat healthy most of the time.” What does this mean for me? I make sure that fruits, vegetables, whole grains, and legumes make up the bulk of my diet, but I don’t neglect my desires for fried food and dessert (hey, at least I’m honest! lol). My husband indulges me by bringing home “something sweet” for me every now and then. Luv ya honey! ;)
