One of my absolute favorite memories of growing up is Daddy’s coconut bake on a Sunday morning. I remember waking up to the smell of this delicious Trinidadian flat bread, the smell of fresh coconut wafting throughout the house. Sometimes my job was to help Mom with the salt fish buljol or maybe to set the table. Either way I was always eager to eat this delicious Trinidadian breakfast. Coconut bake topped with salt fish, a slice of zaboca (avocado), and a tip of pepper sauce: pure delight!
I finally decided to venture out into Daddy’s territory and try making the coconut bake on my own. I called him up for his recipe and got straight to developing a surefire recipe that I could share with you. Since then, I’ve tried the recipe out several times—even this morning! (If you follow me on Instagram, Twitter, or Facebook, I’m sure you’ve seen some pics.)
I’ve found that my electric oven bakes a little differently than my parents’ gas oven. With a few tweaks, I’ve been able to produce a soft, golden brown coconut bake. Stay tuned for the recipe!



I’ve had coconut bake once or twice, it’s very close to our pot bake. Loved it! I’m a huge coconut fan so put that in anything and I will gobble it up. Good to find another Caribbean blogger!

So I was tallkin’ to Dad foreday morning Mints about how you’ve taken up his mantle with the coconut bake. Yuh should see blush and chest heaving! LOL. And I got that from my Dad too he said proudly. “I remember Daddy waking early in the morning to break the coconuts.” Then we woke up to the sweet aroma of home-cooked coconut bake.” AH – family traditions!!
