I’ve been craving red velvet cupcakes, so I decided to try out the vegan version done by The Sweetest Vegan on YouTube. The recipe is quite interesting as it calls for beets to give the red color. They were pretty good, but to be honest…I could taste the beets. I have a very strong sense of taste though. We had a young family over for Sabbath lunch, and their son didn’t know the difference. He had two! lol
Here’s what we’re eating this week:
Sunday/Monday: Roasted Vegetable Salad (Roasted Sweet Potatoes, Broccoli, and Vegetarian Italian Sausage)
Tuesday/Wednesday: Sushi and Veggie/Tofu Stir-Fry
Thursday/Friday: Vegetarian Chicken Caesar Wraps
Sabbath: Spaghetti & Meatballs, Roasted Vegetables, and Garlic Bread
We’re having some kids over for lunch this Sabbath, so I’ll be serving up their request: spaghetti and meatballs! What kid doesn’t like spaghetti and meatballs?

I saw the video using beets and had a feeling it would taste like it.
I love that their son didn’t know the difference! Sometimes it can be tricky fooling the kids. lol

I guess I’m not too familiar with beets…plus she said that you couldn’t taste it! LOL I was sure not to say anything about the cupcakes because he had already identified the mac and cheez as “not real.” lol Kids are the greatest. Thanks for the compliment. That one is thanks to my handy iPhone!
