Menu Plan Monday (on a Tuesday)

 

Hey guys. I’m a little shaken up about my husband being in an accident yesterday. (He is okay, thank God.) Just trying to get back into my groove, you know? I didn’t even know where to start with my to do list this morning. I’m just taking it one step at a time.

 

I’ve been trying some new things, that I hope to post here on the blog soon. Last week I started working on a Vegan Fettuccine Alfredo Recipe:

How does it look? There are a few things I’d like to tweak, and then it will be all ready for you to devour! :)

 

This week we’re eating:

Sunday: Egg Noodles with Meat Sauce

Monday/Tuesday: Grilled Bean Burritos, Mexican Rice, and Roasted Fajita Veggies

Wednesday: Roasted Chickpea Tacos

Thursday/Friday: Braised Coconut Spinach and Chickpeas with Lemon over Baked Sweet Potatos

Sabbath: Dhalpuri Roti, Buss-up-shut Roti, Curry Potato and Channa, Curry Chicken, and Bhaji
