Recipe: Vegetarian Meatloaf

 

I’ve been a bad girl. I guess it’s confession time…So I did a series of 4 holiday cooking shows for my YouTube channel in December. Shortly after that, I traveled home for the holidays and let’s just say I had a lot of fun. LOL Long story short, I haven’t gotten around to posting the actual recipe for the Vegetarian Meatloaf in the video until now.


This recipe is delicious, but to be honest the Deluxe Vegetarian Meatloaf takes first prize. Then again, everyone has different tastes. So why not try both and tell me your opinion? Looking forward to hearing from you. :)

 

 

 

Vegetarian Meatloaf

Vegetarian Meatloaf

Ingredients

  • ~Bread Mixture~
  • ½ stick butter
  • ½ large onion
  • 1 tsp. sage
  • 1 tsp. rosemary
  • 6 slices of bread cubed
  • ~“Vegemeat” Mixture~
  • 1- 1lb. 4 oz. can of Worthington Vegetarian Burger
  • ½ 14 oz. block firm tofu, mashed
  • 2 eggs, beaten
  • 1 tsp. garlic
  • 1 tsp. rosemary
  • 1 tsp. rubbed sage
  • 1 tsp. Lawry’s seasoning salt (or to taste)
  • ½ cup green seasoning (1 clove garlic, 1 cup cilantro, 1 spring onion blended with a little water)
  • ~Sauce~
  • ¾ cup ketchup
  • ¾ cup white sugar

Instructions

  1. Preheat oven to 350F.
  2. To prepare the bread mixture, melt butter in pan on medium heat. Add onions and sauté until soft. Add sage and rosemary, and sauté for about 1 minute. Add cubed bread and combine with butter mixture until butter is absorbed into bread.
  3. To prepare the “vegemeat mixture,” place tofu in large mixing bowl and mash until it is the consistency of ground meat. Add the Worthington vegetarian burger and mash up.
  4. Add the bread mixture to the meat mixture and combine. Mix the seasonings in with the beaten egg and add to meat and bread mixture. Add the green seasoning, and combine everything well.
  5. Lightly grease baking dish, and add mixture to dish. Evenly distribute in dish and smooth the top with a spoon.
  6. Bake uncovered for one hour.
  7. To prepare the sauce, mix the sugar and ketchup together. Check for doneness with a knife. If it comes out clean, the sauce may be added. Distribute evenly over the loaf and bake uncovered for an additional 15 minutes. Allow to cool a bit before cutting. Enjoy!
