Recipe: Stewed Vegetarian Meat (Daddy’s Veggie Mix)

 

One of my dad’s specialties is a dish more affectionately known as Daddy’s Veggie Mix. Daddy’s Veggie Mix is a stew of assorted vegetarian “meats” including Morningstar Grillers and Loma Linda Big Franks. Any time we’re having coconut bake or fry bake, dad whips up a pot of this delicious vegetarian entrée. You can enjoy it with bake for breakfast or with dumpling and provision for lunch. I made oil down (cassava cooked in coconut milk) for the first time this past Saturday and enjoyed it with Daddy’s Veggie Mix. Yum!

Stewed Vegetarian Meat (Daddy’s Veggie Mix)

Stewed Vegetarian Meat (Daddy’s Veggie Mix)

Ingredients

  • canola oil
  • 2 medium garlic cloves
  • ½ onion, chopped
  • ½ cup bell pepper, chopped
  • ½ cup cilantro, chopped
  • 1 can of Loma Linda Big Franks (8 vegetarian hot dogs)
  • 4 Morningstar Griller patties
  • 1 cup ketchup
  • 1 ½ cup hot water

Instructions

  1. Chop Big Franks and Grillers into large chunks and set aside.
  2. Heat pot over medium heat. Coat bottom of pot with oil and add garlic cloves. Allow to burn, and then remove from the pot.
  3. If pot is smoking, allow it to cool before adding onions and bell pepper. Add onion and bell pepper, and sauté.
  4. Add cilantro and sauté briefly.
  5. Add chopped big franks and grillers. Next, add the ketchup and combine. Add up to 1 ½ cup water to make a sauce with a medium consistency. Add a little salt to taste and simmer for 15 minutes.

Notes

Feel free to substitute mini sweet peppers for the bell peppers. It's just as delicious!
